Bleu Halibut

The Fairbanks Princess is a hotel built literally on the banks of the beautiful Chena River. When I served as chef there, Vivian was one of our most talented members of the staff. She was not only a fantastic cook, she had a sunny atmosphere and a whacky sense of humor, and Blue Cheese Halibut was her dish. The preparation is very similar to the Halibut Olympia recipe.

Ingredients

  • 2 c. onions, sliced
  • 2 T. butter
  • six 6-8 oz. halibut fillets
  • 4 T. lemon juice
  • few dashes Old Bay Seafood Seasoning
  • ¾ c. sour cream
  • 1-1/2 c. mayonnaise
  • 2 t. nutmeg
  • 1-1/2 c. crumbled blue cheese
  • 4 green onions, chopped
  • 1 c. fresh bread crumbs
  • paprika

Directions

  1. In a large skillet over medium heat, sauté the onions in the butter until they are caramelized and begin to become translucent. Remove from heat and arrange in bottom of a large baking dish.
  2. Pre-Heat oven to 400 degrees.
  3. Directly on top of the sautéed onions, carefully arrange the uncooked fillets of halibut. Sprinkle each piece with a bit of lemon juice, then sprinkle each portion with some of the Old Bay Seasoning.
  4. Place baking dish with halibut into oven and bake for 10 minutes per inch of thickness of the fish.
  5. In a small bowl mix together the sour cream, mayonnaise, nutmeg, blue cheese and green onions.
  6. Remove dish of cooked halibut carefully from oven and divide the blue cheese topping between the 8 portions of fish, smoothing it carefully on top of each.
  7. Sprinkle each portion with some fresh breadcrumbs and also a bit of paprika.
  8. Return to oven and bake until topping is heated through and is bubbly and slightly browned. Serve.
