Ingredients

  • 3 c. Blackberries, 12-ounce
  • 1/2 tsp Finely grated orange zest
  • 1/4 c. Fructose, divided
  • 1 Tbsp. Water
  • 1 Tbsp. Frzn orange juice concentrate
  • 1 x Egg
  • 3 Tbsp. Nonfat lowfat milk
  • 1 Tbsp. Unsalted butter, melted
  • 2 Tbsp. Nonfat lowfat sour cream
  • 1/4 tsp Vanilla
  • 1/2 c. Unbleached flour
  • 1/2 tsp Baking pwdr
  • 1 pch Salt

Directions

  1. Preheat oven to 350F.
  2. Mix blackberries with orange zest, 2 Tbsp. of the fructose, water and undiluted orange-juice concentrate. Divide berries among 6 ramekins, 1/2 c. each. Set aside.
  3. Combine egg, lowfat milk, butter, lowfat sour cream, vanilla and the remaining 2 Tbsp. fructose in a bowl. Mix well and set aside.
  4. In another bowl combine flour, baking pwdr and salt. Add in dry ingredients to the wet ingredients. Mix to combine just till all ingredients are moistened. Don't overmix.
  5. Spoon 1 1/2 Tbsp. batter on top of the berry mix in each ramekin.
  6. Place ramekins on a baking sheet and bake in the preheated oven for 15 to 20 min, or possibly till tops are lightly browned.
  7. Makes 6 servings.
