Ingredients Convert Measures

  • 1 c. canned black beans rinsed and liquid removed
  • 1/2 c. papaya peeled, seeded and
  •     diced
  • 2 Tbsp. red bell pepper chopped
  • 2 Tbsp. green bell pepper chopped
  • 1 x scallion sliced thinly
  • 1 tsp fresh chili pepper finely minced
  • 2 Tbsp. fresh lime juice
  • 2 tsp vegetable oil

Directions

  1. Combine all ingredients and toss to blend. If you like, refrigeratebefore serving.
  2. Yield: 4 servings
