Black Bean And Pasta Bowl Recipe
- 1 c. Black beans (dry)
- 2 Tbsp. Oil
- 1 lrg Onion, minced
- 2 x Cloves garlic, minced
- 2 can Chicken broth
- 1 can (28-ounce) tomatoes, and juice
- 2 tsp Sugar
- 2 Tbsp. Red wine
- 1/4 tsp Pepper
- 1 Tbsp. Salsa
- 1 x Red pepper, minced
- 1 c. Uncooked elbow macaroni
- 2 x Green onions, minced
- 2 Tbsp. Cilantro
Directions
- Cover beans with water. Bring to a boil and boil for 2 min. Let stand for 1 hour; drain. Heat oil and sauce onion and garlic. Add in beans and broth. Simmer, covered, for 1-1/2 hrs. Add in remaining ingredients except macaroni and red pepper; simmer 15 min. Meanwhile cook pasta according to package directions; drain. Add in pasta and red pepper. Simmer 5 min and serve.
