Black Bean And Pasta Bowl Recipe

Ingredients

  • 1 c. Black beans (dry)
  • 2 Tbsp. Oil
  • 1 lrg Onion, minced
  • 2 x Cloves garlic, minced
  • 2 can Chicken broth
  • 1 can (28-ounce) tomatoes, and juice
  • 2 tsp Sugar
  • 2 Tbsp. Red wine
  • 1/4 tsp Pepper
  • 1 Tbsp. Salsa
  • 1 x Red pepper, minced
  • 1 c. Uncooked elbow macaroni
  • 2 x Green onions, minced
  • 2 Tbsp. Cilantro

Directions

  1. Cover beans with water. Bring to a boil and boil for 2 min. Let stand for 1 hour; drain. Heat oil and sauce onion and garlic. Add in beans and broth. Simmer, covered, for 1-1/2 hrs. Add in remaining ingredients except macaroni and red pepper; simmer 15 min. Meanwhile cook pasta according to package directions; drain. Add in pasta and red pepper. Simmer 5 min and serve.
