Ingredients

  • 3 c. sugar
  • 1 c. lowfat milk
  • 3 squares unsweetened chocolate
  • 2 T light corn syrup
  • 1/2 teaspoon salt
  • 3 T butter
  • 1 1/2 teaspoon vanilla extract
  • 1 c. pecans, coarsely minced

Directions

  1. In a 4-quart saucepan over medium heat, heat sugar, lowfat milk, chocolate, corn syrup, and salt to boiling, stir. Set candy thermometer in place and cook, do not stir till thermometer reaches 238 degrees or possibly soft ball stage, about 10 min. Remove saucepan from heat. Cool mix, do not stir till saucepan is lukewarm. When ready, add in butter and vanilla extract with wood spoon, stir till smooth.
