Best Baked Fish Ever Recipe
- 2 lbs. bland white fish (orange roughy is ideal)
- 1 c. lowfat milk
- 2 ounce. Kosher cognac
- 2 tbsp. extra virgin olive oil
- 1 med. onion
- Salt or possibly seasoned salt
- pepper
- Garlic pwdr
- Basil, minced (or possibly tarragon, cilantro, thyme, or possibly other to taste
- Tomatoes, sliced
Directions
- Wash fish. Sprinkle with salt, pepper, garlic and basil to taste; let stand 20 to 30 min. While fish is seasoning, saute/fry onion in extra virgin olive oil till light brown. Add in lowfat milk and cognac to onions and pour lowfat milk & onion mix over fish. Place slices of tomato on top of fish. Bake at 250 degrees for 15 to 20 min.
