Beef Enchilada Rice

Ingredients

  • 1/2 pound lean beef diced (I use the beef strips for stir fry)
  • 1 tbsp. vegetable oil
  • 1/3 c. diced onions
  • 1 clove garlic
  • 1 1/2 teaspoon chili pwdr (use less if you do not want it so spicy)
  • 1/2 teaspoon oregano
  • 1 quart. tomato juice
  • 3/4 c. water
  • 1 1/2 c. minute rice

Directions

  1. Brown beef in oil. Add in onions, garlic, oregano, chili pwdr and salt. Saute/fry onions and garlic till tender. Then add in tomato juice and water. Bring to a good boil. Stir in rice. Cover and remove from heat. Let stand 5 min.
