Ingredients Convert Measures

  • 1/4 c. chili pwdr
  • 4 c. BBQ sauce
  • 3 c. crushed tomatoes
  • 6 c. shredded cooked chicken pcs - (24 ounce)
  • 6 c. cooked red beans - (24 ounce)
  • 11 Tbsp. Tabasco brand Pepper Sauce divided
  • 20 1/2 ounce lowfat sour cream
  • 6 lb steak fries cooked
  • 6 c. shredded Monterey Jack cheese - (24 ounce)
  •     Diced scallions as needed

Directions

  1. To make the chicken chili, combine chili pwdr, BBQ sauce, tomatoes, chicken, beans and 2 ounces of Tabasco brand Pepper Sauce in a large saute/fry pan; simmer for 20 min. Hold hot for service.
  2. To make the lowfat sour cream garnish, combine lowfat sour cream and 3 1/2 ounces of Tabasco brand Pepper Sauce. Chill till needed.
  3. For each serving, place 8 ounces of fries on an oven proof plate, top with 2 ounces of cheese and heat under broiler. Top with 8 ounces of warm chili and garnish with 2 ounces of Tabasco brand Pepper Sauce lowfat sour cream; sprinkle with scallions.
  4. This recipe yields 12 servings.
