Ingredients

  • 1 c. Barley -- rinsed and cooked according to package directions
  • 13 ounce White Tuna in Water -- liquid removed
  • 1/2 lb Green Beans -- cooked and cut into 1" pcs
  • 1/2 sm Red Onion -- thinly sliced
  • 1/3 c. Black Nicoise Olives -- pitted
  • 2 x Large eggs -- hardboiled Dressing
  • 5 Tbsp. Extra virgin olive oil
  • 2 Tbsp. Parmesan Cheese
  • 4 x Anchovies -- chopped
  • 1 tsp Fresh Thyme
  • 2 Tbsp. Lemon Juice
  • 1/2 tsp Dry Mustard Pepper
  • 6 x Wedges Lemon

Directions

  1. Combine barley and tuna. Add in remaining salad ingredients.
  2. Mix the dressing ingredients.
  3. Toss with the barley mix. Refrigeratewell.
  4. Description: "Barley, tuna, green beans, olives, Large eggs, onions, in a lovely vinaigrette dressing"
  5. Serving Ideas: Serve with a lemon wedge and garnish with sprigs of fresh thyme.
