- 3 tsp Dijon mustard
- 1 Tbsp. extra virgin olive oil
- 1/4 c. chopped shallots
- Salt to taste
- Freshly-grnd black pepper to taste

- In a small bowl, whisk together all ingredients. Serve over salad greens. You can store this dressing in the refrigerator for 2 weeks.
