Ingredients Convert Measures

  • 1 basket ripe strawberries, rinsed, hulled and sliced in half
  • 2 tablespoons granulated sugar
  • 2 teaspoons Villa Manodori balsamic vinegar or quality balsamic vinegar
  • Pinch of salt and finely ground black pepper
  • 1 cup heavy whipping cream
  • 1/2 cup mascarpone cheese
  • 4 mint sprigs

Directions

  1. In a medium bowl, lightly toss the berries with 1 tablespoon of sugar. Allow berries to macerate until sugar dissolves and the berries release some juice, approximately 10 minutes.
  2. Drizzle balsamic over berries, and add salt and pepper. Toss to combine.
  3. Place cream and mascarpone in a bowl and whip to light peaks, add remaining sugar and beat until mixture holds stiff peaks.
  4. Divide berries into individual bowls, top with mascarpone cream and mint. Serve immediately.
