Baked Pumpkin With Oregano And Pancetta Recipe
- Splash of extra virgin olive oil
- 1 x Onion, minced
- 1 x Clove garlic, finely minced
- 1 sm Pumpkin, peeled, sealed and cubed
- 2 x Plum tomatoes, peeled, seeded and cubed
- 150 ml White wine, (1/4 pint)
- 4 slc Thinly sliced pancetta, cut into pcs
- Few sprigs fresh oregano, minced
Directions
- Fry onion, garlic and pancetta in the oil. Add in the pumpkin and fry till golden brown. Add in the wine, tomato and oregano.
- Season and turn into an oven proof dish.
- Bake for 20 min, till the pumpkin is softened and golden brown.
- Garnish with extra minced herbs.
