Baked Pumpkin With Oregano And Pancetta Recipe

Ingredients

  •     Splash of extra virgin olive oil
  • 1 x Onion, minced
  • 1 x Clove garlic, finely minced
  • 1 sm Pumpkin, peeled, sealed and cubed
  • 2 x Plum tomatoes, peeled, seeded and cubed
  • 150 ml White wine, (1/4 pint)
  • 4 slc Thinly sliced pancetta, cut into pcs
  •     Few sprigs fresh oregano, minced

Directions

  1. Fry onion, garlic and pancetta in the oil. Add in the pumpkin and fry till golden brown. Add in the wine, tomato and oregano.
  2. Season and turn into an oven proof dish.
  3. Bake for 20 min, till the pumpkin is softened and golden brown.
  4. Garnish with extra minced herbs.
