Ingredients Convert Measures
- 2 c. Fresh Pineapple, minced
- 1 1/2 c. Baking Apple, minced
- 2 x Oranges, peeled, sectioned, and minced
- 1/4 c. Fresh Basil, chopped
- 2 Tbsp. Onion, finely minced
- 2 Tbsp. Fresh Lime Juice
- 1/4 tsp Grnd Cumin
- 1/8 tsp Cayenne Pepper
- 1 x Cooked, (4-lb.) boneless Ham
Directions
- Prepare the fruit mix, combining the pineapple, apple, oranges, basil, onion, lime juice, cumin, and cayenne pepper in a large bowl.
- Cover and chill for up to 2 days, and be sure to allow ham to marinate for at least 4 hrs prior to baking and serving.
- Place ham on a rack in a shallow baking pan. Score the top in a diamond pattern. Insert a meat thermometer. Bake, uncovered, in a 325-F degree oven for 1 1/2 to 2 hrs, or possibly till thermometer registers 140-F degrees.
- To serve, slice ham and pour a hearty line of the fruit mix over the row of slices. You may serve any leftover fruit mix as a compote, on the side.
