Baked Goat Cheese Salad Recipe by Nancy Miyasaki.

This is a delicious and easy to make salad that is adapted from Martha Stewart. We skip a few steps to make it much more convenient, but if you're like us you won't taste the difference. Outstanding!

Directions

  1. Preheat oven to 350
  2. Slice goat cheese into 8 equal rounds
  3. Combine bread crumbs, herbs, salt & pepper
  4. Roll goat cheese in bread crumb mixture
  5. Drizzle with olive oil
  6. Put in a baking dish and bake at 350 for 15 minutes or until crumbs are golden
  7. Combine greens with tomatoes, mushrooms, and/or avocado (optional)
  8. Toss greens with balsamic vinegar and olive oil to taste
  9. Serve salad on individual plates with two slices of goat cheese on the side (or on top)
