Baked Goat Cheese Salad Recipe
This is a delicious and easy to make salad that is adapted from Martha Stewart. We skip a few steps to make it much more convenient, but if you're like us you won't taste the difference. Outstanding!

Ingredients Convert Measures
- 1 mini log of goat cheese (approx 5oz)
- 1/2 cup unseasoned bread crumbs (sourdough are great)
- 2 tsp thyme and/or oregano leaves (or 1 tsp dried)
- Kosher salt and fresh ground pepper to taste
- 3 Tbsp Balsamic vinegar
- Extra virgin olive oil
- 1 bag mixed salad greens
- Cherry tomatoes (optional)
- Sliced mushrooms (optional)
- Sliced avocado (optional)
Directions
- Preheat oven to 350
- Slice goat cheese into 8 equal rounds
- Combine bread crumbs, herbs, salt & pepper
- Roll goat cheese in bread crumb mixture
- Drizzle with olive oil
- Put in a baking dish and bake at 350 for 15 minutes or until crumbs are golden
- Combine greens with tomatoes, mushrooms, and/or avocado (optional)
- Toss greens with balsamic vinegar and olive oil to taste
- Serve salad on individual plates with two slices of goat cheese on the side (or on top)
