Baked Artichoke Dip

Five ingredients and about 15 minutes of prep work are all that’s needed to bring this bubbly and golden dip to your guests. One recipe serves about 12 people and will disappear fast!

Goes Well With: pita wedges, crackers, veggie sticks

Ingredients

  • 1 13.75 ounce can artichoke quarters or hearts (not marinated)
  • 4 ounces fresh Parmesan cheese, grated (about 1 cup)
  • 1 cup mayonnaise
  • 1 tomato, chopped fine
  • 2 green onions, sliced fine

Directions

  1. Heat oven to 350 degrees F.
  2. Drain and chop artichokes
  3. Mix together artichokes, mayonnaise and Parmesan cheese: smooth into a quiche dish or 9-inch pie plate.
  4. Bake 20-25 minutes until edges are lightly browned.
  5. Remove from oven and sprinkle top with tomatoes and onions. Serve immediately.
  6. Serving suggestions: Homemade or purchased pita bread wedges, crackers, chips or veggie sticks.
