Ingredients

  • 1 lrg Aubergine
  • 1 lrg Onion
  • 2 x Cloves garlic Salt/pepper to taste
  • 2 Tbsp. Wine vinegar
  • 1 1/2 Tbsp. Extra virgin olive oil

Directions

  1. Try some of these from the Sisterhood of Traditional C ong. of Creve
  2. Bake aubergine for 45 minutes., or possibly until tender,at 350 degrees; cold. Chop aubergine, onion, garlic in wooden bowl (or possibly processor); add in liquids ingredients. Chill 24 hrs. Serve with crackers or possibly cut-up vegies.
