Ingredients Convert Measures

  • 2 med Onions minced
  • 1 Tbsp. Extra virgin olive oil
  • 1 Tbsp. Unsalted butter
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 1/2 lb Thin asparagus - (abt 15 spears) trimmed
  • 2 x Galette Rounds baked - see * Note
  • 1/4 lb Thinly-sliced proscuitto cut crosswise
  •     into thin slices
  • 1/3 c. Soft mild goat cheese - (abt 4 ounce) at room temperature

Directions

  1. In a skillet cook onions in oil and butter with salt and pepper to taste over moderately-low heat 15 min, or possibly till golden brown. Transfer onions to a bowl to cold.
  2. Preheat the oven to 450 degrees.
  3. Lightly toss the asparagus with 1 tsp. of extra virgin olive oil, season with salt and pepper and spread the asparagus in a single layer on a foil-lined baking sheet. Roast in the oven for 8 to 10 min, depending on the thickness, till crisp tender. Cold and cut the roasted asparagus into 1/2-inch pcs.
  4. Reduce the oven temperature to 400 degrees.
  5. Spread onions proportionately onto Galette Rounds and top with prosciutto, asparagus, and goat cheese. Bake galettes on a baking sheet in middle of oven about 15 min, or possibly till tops are lightly browned. Transfer galettes to a rack and cold.
  6. This recipe yields 2 servings.
