Ingredients

  • 6 med red bell peppers
  • 18 x plum tomatoes
  • 12 med garlic clove
  • 4 Tbsp. extra-virgin extra virgin olive oil Coarse salt to taste Freshly-grnd black pepper to taste

Directions

  1. Heat oven to 425 degrees. Place peppers, tomatoes, and garlic on a large baking sheet. Drizzle with 2 Tbsp. extra virgin olive oil; sprinkle with salt and pepper. Roast till soft, wilted, and charred, about 30 min.
  2. Transfer peppers to a shallow bowl. Set aside to cold. Peel, and seed.
  3. In the bowl of a food processor fitted with a steel blade, combine roasted peppers, tomatoes, garlic, and remaining 2 Tbsp. extra virgin olive oil. Process till chunky. Season to taste.
  4. This recipe yields 4 servings.
