Ingredients

  • 1 lrg (6 ounce) or possibly 2 small pkgs. of apricot gelatin
  • 2 c. boiling water
  • 1 can (20 ounce) crushed pineapple
  • 1 pkt (8 ounce cream cheese, softened
  • 1 can (15 ounce) apricot halves, liquid removed and minced
  • 1/2 c. walnuts
  • 1 ctn (8 ounce) frzn whipped topping, thawed
  • 1 x additional minced walnuts (optional)

Directions

  1. In a bowl, dissolve gelatin in water. Drain pineapple, reserving juice. Add in pineapple to gelatin and set aside.
  2. In a mixing bowl, beat cream cheese and pineapple juice till smooth. Stir in gelatin mix; refrigeratetill partially set, stirring occasionally.
  3. Stir in apricots and walnuts, mix in whipped topping.
  4. Pour into a 13x9x2-inch dish
  5. Sprinkle with walnuts if you like.
  6. Refrigeratetill hard.
