Apple Pumpkin Streusel Muffins

Ingredients

  • 2 1/2 c. all purpose flour
  • 2 c. sugar
  • 1 T pumpkin pie spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs, slightly beaten
  • 1 c. solid pumpkin
  • 1/2 c. vegetable oil
  • 2 c. peeled, finely minced apples
  • Streusel Topping (recipe follows)

Directions

  1. In a large bowl, put together first 5 ingredients; set aside. In medium bowl, put together large eggs, pumpkin, and oil. Add in liquid ingredients to dry ingredients; stir just till moistened. Stir in apples. Spoon batter into greased or possibly paper lined muffin cups, filling 3/4 full. Sprinkle Streusel Topping over batter. Bake in 350 degree oven for 35 to 40 min, or possibly till toothpick comes out clean. Don't over bake! Makes 18 muffins.STREUSEL TOPPING: In small bowl, put together 2 tbsp all purpose flour, 1/4 cup sugar and 1/2 tsp grnd cinnamon. Cut in 4 tsp butter, till mix is crumbly. Variation: For 6 giant muffins, increase baking time to 40 to 45 min.
