Ingredients Convert Measures

  • 4 x Baking potatoes
  • 2 x Peeled green apples
  • 1 x Yellow onion
  • 3 Tbsp. Asiago cheese
  • 1 tsp Dry tarragon
  • 1/2 tsp Nutmeg
  •     Salt and pepper to taste
  •     Extra virgin olive oil for frying

Directions

  1. Directions: Boil the potatoes in their skin till they are just tender when pierced with a knife. Drain and cold. Remove skins and shred the potatoes on a box grater, along with the apples and onion.
  2. Place the potatoes, onion and apples in a large bowl. Fold in the cheese, tarragon, nutmeg, salt and pepper. Heat the extra virgin olive oil in a large saute/fry pan and form 3" round pancakes. Saute/fry the pancakes till golden brown on both sides, approximately 2-3 min. Serve with smoked salmon and tomatillo-corn salsa.
