Ingredients

  • 2 c. flour
  • 3 Tbsp. sugar
  • 3/4 c. butter or possibly margarine, cut up
  • 1 x egg, slightly beaten
  • 1 Tbsp. fresh lemon juice
  • 4 Tbsp. ice water
  • 6 x egg yolks
  • 3/4 c. sugar
  • 1/8 tsp salt
  • 3/4 c. Brazil nuts, pulverized
  • 1/3 c. raisins, dark or possibly light
  • 3 c. tart apples, shredded (about 3 large)
  • 1/2 tsp cinnamon
  • 6 Tbsp. apricot jam
  • 6 Tbsp. butter or possibly margarine, melted Sweetened whipped cream Toasted slivered Brazil nuts

Directions

  1. Almonds can be substituted for the Brazil nuts.
  2. Mix flour and sugar in bowl. Cut butter into mix till pcs are the size of peas. Blend the egg, lemon juice and 3 Tbsp. water. Sprinkle over the dry ingredients. Toss with fork till flour is moistened. Press into a ball. Add in last Tbsp. of water, if needed. Roll pastry into a 9x13-inch baking pan, building the edge up about 1 inch. In small bowl, beat egg yolks till fluffy. Add in sugar and salt. Beat at high speed till thick and lemon colored. Stir in the nuts and raisins. Mix in the apples and cinnamon. Spread apricot jam over the pastry. Top with apple-nut mix. Bake at 350 degrees F. for 25 min. Drizzle with melted butter. Return to oven. Bake 15-20 min longer till top is golden brown. Cut into squares. Serve hot with slightly sweetened whipped cream and garnished with Brazil nuts.
