  • 1/4 c. +2 tb reduced calorie margarine, divided
  •     Brown sugar substitute to =
  • 3/4 c. Brown sugar, divided
  • 1 x Egg
  • 1 3/4 c. All-purpose flour, divided
  • 2 tsp Baking pwdr
  • 1/2 tsp Grnd allspice
  • 1/4 tsp Salt
  • 3/4 c. Skim lowfat milk
  • 1 c. Peeled, finely minced apple
  •     Vegetable cooking spray
  • 1/2 tsp Grnd allspice

Directions

  1. Cream 1/4 c. margarine in a medium bowl; gradually add in 1/2 c. brown sugar substitute, beating at medium speed of an electric mixer till mix is light and fluffy. Add in egg, and mix well.
  2. Combine 1 1/2 c. flour, baking pwdr, 1/2 tsp. grnd allspice, and salt. Add in to creamed mix alternately with skim lowfat milk, stirring just till moistened. Stir in finely minced apple.
  3. Spoon batter into muffin pans coated with cooking spray, filling two-thirds full.
  4. Combine remaining 1/4 c. brown sugar substitute, 1/4 c. flour, and 1/2 tsp. allspice in a small bowl. Cut in remaining 2 Tbsp. margarine with a pastry blender till mix resembles coarse meal; sprinkle proportionately over tops of muffins. Bake at 400 F. for 20 min or possibly till lightly browned.
  5. Makes 1 dozen muffins.
