Ingredients Convert Measures

  • 1 x (16 oz) package grnd pork breakfast sausage
  • 12 x Large eggs
  • 1 x (10.75 oz) can condensed cream of mushroom soup
  • 1 x (10.75 oz) can lowfat milk
  • 1 x (4.5 oz) can sliced mushrooms, liquid removed
  • 1 x (32 oz) package frzn potato rounds
  • 1/2 c. shredded Cheddar cheese

Directions

  1. Place sausage in a skillet over medium-high heat, and cook till proportionately brown. Drain, and set aside.
  2. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish. In a large bowl, beat together the Large eggs, condensed cream of mushroom soup, and lowfat milk. Stir in the sausage and mushrooms, and pour into the prepared baking dish. Fold in the frzn potato rounds. Bake in preheated oven for 45 to 50 min.
  3. Sprinkle with cheese, and bake an additional 10 min, or possibly till cheese is melted.
  4. Makes 12 servings
