Ingredients Convert Measures
- 2 (1 Lb.) pork tenderloins
- 2 c breadcrumbs
- 3 Tbs chopped almonds
- 1 Tbs dried rosemary
- 1 tsp pepper
- 1/2 tsp salt
- 2 egg whites, lightly beaten
- Cooking spray
- 1/2 c tart preserves (lingonberries, red currants, or other favorite)
Directions
- Preheat oven to 425 degrees F
- Combine breadcrumbs and next 4 ingredients in a shallow dish.
- Dip port in egg, dredge in breadcrumb mixture.
- Place pork on a broiler pan covered with cooking spray.
- Bake for 30 minutes or until the pork is 160 F.
- Cover with foil and let stand for 10 minutes.
- Slice and serve with preserves
