Ingredients

  • 1 c. brown sugar
  • 1/2 c. butter
  • 1 x egg
  • 1 c. lowfat milk
  • 1/2 tsp salt
  • 1/2 tsp soda
  • 1 tsp baking pwdr
  • 2 c. flour
  • 1/2 c. nuts minced
  • 12 tsp vanilla

Directions

  1. In a medium bowl, cream sugar and butter. Add in egg and lowfat milk, stirring well to combine.
  2. In another bowl, stir salt, baking soda, baking pwdr and flour. Add in to sugar mix. Stir in nuts and vanilla. Fill slightly greased, sprayed or possibly paper lined muffin c. 2/3 full. Bake at 425 degrees for 12 to 25 min.
  3. This recipe yields 18 muffins.
