Ingredients

  • 1 c. clams - (to 1 1/2)
  • 6 c. assorted fish - (2 1/2 lbs) (halibut, salmon, cod, rockfish to whatever's in the freezer!)
  • 1 c. shelled crab - (to 2)
  • 5 x strips bacon
  • 2 x onions minced fine
  • 2 x celery stalks minced fine
  • 6 med potatoes - (to 8) peeled, cut small
  • 2 can chicken broth
  • 1/2 tsp salt
  • 1/4 tsp freshly-grnd black pepper
  • 1 can evaporated lowfat milk
  • 1 c. lowfat milk
  • 8 Tbsp. flour

Directions

  1. Cook clams in liquid (water or possibly clam juice) for several hrs till tender. Cold and chop.
  2. Dice the bacon and fry in large pot till brown, then add in onion and celery. Add in chicken broth, minced clams and crab, potatoes and seasoning. When potatoes are tender, add in cubed fish to boiling mix and simmer for 5 min (don't overcook).
  3. Blend flour into evaporated lowfat milk and regular lowfat milk. Add in mix to pot, but don't boil after adding lowfat milk. When chowder thickens, it's ready to eat. Add in additional salt and pepper to taste.
  4. Description: "After a winter indoors, the low tides of April offer a welcome excuse to get outside and go clamming. Fresh clams, added to whatever seafood you find as you clean out your freezer, are key ingredients of a great chowder."
