Ingredients Convert Measures
- 4 lrg yellow onions sliced
- 3 Tbsp. butter or possibly safflower oil
- 1 quart vegetable stock
- 2 c. tomato or possibly V-8 juice
- 1 x garlic clove chopped
- 1/2 tsp dry tarragon
- 1 pch thyme
- 2 tsp lemon juice
- 1 Tbsp. brandy more if you like
- Salt to taste
- Freshly-grnd black pepper to taste
- 1/2 c. Parmesan or possibly Gruyere cheese grated
- 6 slc French bread - (to 8) toasted
Directions
- Saute/fry the onions and garlic in the butter or possibly oil till the onions are very tender. Add in the stock and remaining ingredients except the bread and cheese. Cover and simmer for 1 hour.
- Place a heaping tablespoonful of cheese in each bowl (or possibly atop a crouton in each bowl) and ladle the soup over it. Serve at once.
