  • 4 vine-ripened tomatoes, chopped
  • 1 medium mango, peeled and chopped
  • 1 medium ripe avocado, peeled and cubed
  • ¾ cup fresh or thawed frozen corn
  • ½ cup fresh cilantro, roughly chopped
  • ½ cup canned black beans, drained, rinsed and drained again
  • ¼ cup chopped red onion
  • 1 jalapeno pepper, seeded and chopped
  • 3 tbsp. lime juice
  • 1 tbsp. olive oil
  • 2 garlic cloves, minced
  • ¼ tsp. salt
