My husband and boys love food and are pretty much open to try anything once. Our daughter and me are the picky eaters, I don't even like mushrooms!! I am just recently a Stay at Home mom and have taken more of an interest in cooking. Before it was all about simplicity but I now find myself trying to venture more beyond just the simple. I learned to bake by watching my grandma. She was one of those cooks who had all of the recipes in her head. She used no measuring cups or spoons. It was always a couple handfuls of flour, some of this, some of that & before you knew it I was eating fried donuts or fresh made flour tortillas. My dad was also a big influence. Unlike other kids I couldn't watch saturday morning cartoons because my dad was constantly watching the cooking shows on PBS. He was always mixing cultures in his cooking. Mexican pizza? Yeah we were eating that in the late 70's. Curried chicken & potato tamales..yep. done that. We hardly ever ordered pizza..he always insisted on making it himself. I never appreciated it until i was in my late teens when my friends thought it was the most bizarre yet coolest thing ever. I'm now living in California..just across the bay from SF. Married with 3 kids ages 3, 11 & 19 (the 8 yr gap was not intentional). I work at Bridges Restaurant in Danville(yes..the Mrs. Doubtfire restaurant). In Corfu, Greece, Marsh worked in a local hotel’s kitchen as he explored the rich cuisine and cultural landscape of the region. When he returned to the Bay Area, Alex enrolled as an anthropology major at University of California, Berkeley and soon realized he was unable to stay far from the kitchen. He dropped all his classes and enrolled in the California Culinary Academy – a program that enabled him to stage at Stars under Chris Fernandez. After graduation, Marsh’s externship at One Market Restaurant became a full time paid position within one year’s time. He worked for two years with Adrian Hoffman whose teachings continue to shape Marsh’s cooking style, “One Market was one of the best learning experiences of my life,” says Marsh. “They had every piece of equipment imaginable; the momentum was addictive.” Next up was a position at Redwood Park, one of the city’s most highly regarded French restaurants, where Marsh worked with George Morrone. When the restaurant closed in 2002, the young chef moved on to Campton Place. Here he had the good fortune to work with both Laurent Manrique and Daniel Humm, further refining his understanding of the intricacies and perfectionism that characterize a 4-star restaurant. After two years at Campton, Marsh looked up Craig Stoll at Delfina and began to court one of San Francisco’s most beloved chefs with the intention of working in one of the city’s defining restaurants. In 2003, Stoll hired Marsh, and a little under a year later, Marsh was offered the position of Executive Chef at Solstice Restaurant & Lounge by Salud Management Group, which also owns Fly Bar and Brick Restaurant. Marsh jumped on the opportunity to run a kitchen; his managers watched as the young chef put his nose to the grindstone. Working 12-hour days for six solid months, Marsh revamped the program from the ground up. He turned the kitchen into an exciting, money-making operation and refreshed the menu with a seasonal section of weekly changing dishes which continue to excite the lounge’s loyal clientele. In October 2007, Salud tapped Alex Marsh to fill the spot of Executive Chef at Brick Restaurant. Since taking over, 29-year-old Marsh has infused the kitchen atmosphere and Brick’s menu with a convivial energy. Brick’s new offerings highlight San Francisco’s abundance of organic foods in approachable dishes that appeal to the neighborhood crowd, yet resonate with a standard of excellence developed during years of classical training. Vicky and her dad are from Mexico and cooked mostly Mexican foods. On weekends, her dad would get up early to make tortillas rolled out by hand. On the stove was a pot of beans and Vicky and I would fry them in lard and eat them with homemade salsa, eggs and tortillas. He also made menudo. Vicky's uncle was a butcher who like to slow cook meat (goat, mostly) in a pit in his backyard. He would shred the meat and Vicky and I would roll it into corn tortillas and fry the tacos for the entire neighborhood! Out of this relationship grew my love of Mexican food and chiles! In my early 20's I realized that I was pretty good at it, when Food TV came along I was hooked. When people ask me where I went to cooking school I say: "Food TV and my parents house". Now I cook for a family in Sacramento and I'm currently working on writing a cookbook. To be able to get paid to cook is a dream come true by far, its my greatest passion. My other passion is music (listening to it, playing it, singing, writing) but if I had to choose between cooking & making music I'd have to choose cooking. God forbid I ever have to choose though because music is in my blood. My cookbook is going to be a fusion of food & music. Most of my friends are musicians (and amazing ones at that) so they're going to write the music portion, little tid-bits on bands that inspired them, songs that give them goosebumps etc. I'm getting really excited about it as it comes closer to being finished. My favorites are Thai, Japanese and Vietnamese, but I also enjoy Chinese and Korean. I spent time in the Indian town of Pune, and also love Indian food. She had only a small number of dishes that she cooked, but she cooked them with pride, love and humility. No matter how wonderful her roast was, she'd always complain that it was too tough or too dry as we all gobbled it down happily! Later, when I was about 14, I began to join my family friend and rugby coach, Pete Frichette, for dinner once a week. Pete is a true renaissance man--an architect, athlete, scholar, and passionate cook. I began to come over early to enjoy a glass of wine (a treat at age 17) and to help Pete prepare the meal. Pete taught me about fresh herbs, italian and french seasoning, wild game, root vegetables, and the wonders of homemade broths. After my sisters and I moved out, my father David Spottiswood also became an avid chef. Every Sunday we congregate at his house and share the most wonderful meals. He is well traveled and as a result well versed in many cuisines. I have learned numerous wonderful recipes from him. Last but not least, my aunt Jeanne Templeman is an amazing cook.
