Cooking Influences

Prior to coming back to live in the United States a few years ago, I lived in Asia for almost a decade and the majority of my dishes bear resemblances to my favorite Thai, Korean, Northern Chinese, and Japanese cuisines. Although I have never had the pleasure of visiting India, my years in Hong Kong (especially the month or two when I was broke and living in Chungking Mansions) left me craving good, spicy Indian ever since.
