The cumin chicken is wonderful. Chicken has so much more flavor when you cook it with the bones. I normally brine my chicken before I cook it. Brining is easy - soak the chicken for 30 minutes (boneless) or about 45 for pieces in 2 qts water with 1/3 cup kosher salt & 1/4 cup sugar. Whole chicken = 1 hour brining time. It makes it even more moist, especially helpful for boneless chicken breasts.
